Green Asparagus Salad

Ingredients
Dressing
- 3 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- 2 tbsp. nutritional yeast
- 1 tbsp. agave syrup
- 1 tbsp. cider vinegar
- 1 tsp. mustard
- 1 tsp. sesame
- 1 tsp. dill
- 1/2 tsp. oregano
- 1/2 tsp. salt
Salad
- 80 g green lettuce
- 400 g green asparagus
- 50 g dried tomatoes (in oil)
- 1 tbsp vegan butter
- Juice of half a lemon
- Olive oil
Instructions
- Mix all the ingredients for the dressing well together and set aside.
- Wash the lettuce and cut into fine strips. Break off the woody ends of the asparagus. Chop the dried tomatoes into small pieces. Coarsely chop the walnuts.
- In a frying pan over medium heat, foam 1 tablespoon of olive oil and the vegan butter. Sauté the asparagus in it for about 10 minutes until it is cooked. Turn the asparagus several times and deglaze with lemon juice.
- In a salad bowl, thoroughly mix the warm asparagus, lettuce and tomatoes with the dressing. Sprinkle the walnuts on top.
