Green Asparagus Salad

Ingredients

Dressing

    • 3 tbsp. olive oil
    • 2 tbsp. balsamic vinegar
    • 2 tbsp. nutritional yeast
    • 1 tbsp. agave syrup
    • 1 tbsp. cider vinegar
    • 1 tsp. mustard
    • 1 tsp. sesame
    • 1 tsp. dill
    • 1/2 tsp. oregano
    • 1/2 tsp. salt

Salad

    • 80 g green lettuce
    • 400 g green asparagus
    • 50 g dried tomatoes (in oil)
    • 1 tbsp vegan butter
    • Juice of half a lemon
    • Olive oil

Instructions

    • For the dressing, whisk all ingredients together until well combined.
    • Wash the lettuce and cut into fine strips. Snap off the woody ends of the asparagus and cut the spears in half. Halve the tomatoes.
    • Heat the olive oil and vegan butter in a pan over medium heat until foamy. Sauté the asparagus for about 10 minutes until tender, gradually adding the juice of half a lemon.
    • Combine the asparagus, dressing and all remaining ingredients in a bowl and mix well.

About this recipe

Green asparagus can be easily roasted in a pan. Perfect for this warm salad with dried tomatoes, olives and balsamic dressing.
