Green Asparagus Salad

Ingredients
Dressing
- 3 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- 2 tbsp. nutritional yeast
- 1 tbsp. agave syrup
- 1 tbsp. cider vinegar
- 1 tsp. mustard
- 1 tsp. sesame
- 1 tsp. dill
- 1/2 tsp. oregano
- 1/2 tsp. salt
Salad
- 80 g green lettuce
- 400 g green asparagus
- 50 g dried tomatoes (in oil)
- 1 tbsp vegan butter
- Juice of half a lemon
- Olive oil
Instructions
- For the dressing, whisk all ingredients together until well combined.
- Wash the lettuce and cut into fine strips. Snap off the woody ends of the asparagus and cut the spears in half. Halve the tomatoes.
- Heat the olive oil and vegan butter in a pan over medium heat until foamy. Sauté the asparagus for about 10 minutes until tender, gradually adding the juice of half a lemon.
- Combine the asparagus, dressing and all remaining ingredients in a bowl and mix well.
