Ingredients
- 500 g spelt flour
- 10 g salt
- 5 g fresh yeast
- 350 g water
Instructions
- Knead all ingredients slowly for 6 minutes, then quickly for 10 minutes until a smooth, shiny dough forms. Gradually add 50 g of water after the first 6 minutes.
- Let the dough rise overnight in the refrigerator.
- On baking day, allow it to acclimate for one hour.
- With wet hands, flatten the dough on the work surface and cut into Seelen shapes. Place on baking paper. Moisten with water and sprinkle with salt and caraway seeds.
- Bake at 250°C for about 15-20 minutes.
- Moisten with water again 2 minutes before the end.
