Swabian Seelen

Ingredients

    • 500 g spelt flour
    • 10 g salt
    • 5 g fresh yeast
    • 350 g water

Instructions

    • Knead all ingredients slowly for 6 minutes, then quickly for 10 minutes until a smooth, shiny dough forms. Gradually add 50 g of water after the first 6 minutes.
    • Let the dough rise overnight in the refrigerator.
    • On baking day, allow it to acclimate for one hour.
    • With wet hands, flatten the dough on the work surface and cut into Seelen shapes. Place on baking paper. Moisten with water and sprinkle with salt and caraway seeds.
    • Bake at 250°C for about 15-20 minutes.
    • Moisten with water again 2 minutes before the end.
