Cashew Parmesan

For 1 small cup


    • 100 g cashews
    • 3 tbsp. nutritional yeast
    • Salt


    • First roast the cashews in a pan without oil until they get some color.
    • Then finely grind in a stand mixer together with the nutritional yeast and 1 teaspoon of salt.

Finely crushed cashews with nutritional yeast and salt make a delicious topping for pasta, pizza or salads as an alternative to grated parmesan cheese.
