Lentil Curry Spread

Ingredients
- 70 g red lentils (raw)
- 40 g sunflower seeds
- 40 g rapeseed oil
- 10 g sugar
- 15 g mango
- Juice of half a lime
- 1/2 tsp curry powder
- 1/4 tsp turmeric
- pinch of salt
- pinch of pepper
Instructions
- Cook the red lentils in plenty of water for about 20 minutes. Then drain through a sieve.
- Meanwhile, toast the sunflower seeds in a pan without oil over medium heat.
- Place about two-thirds of the cooked lentils in a high-speed blender with all remaining ingredients and blend until smooth. Add 1–2 tbsp water if needed to reach the desired consistency.
- Transfer everything to a bowl and fold in the remaining lentils.
- Season with salt, curry powder and lime juice.
